“Santoku” means an all-purpose knife, suitable for meat, fish and vegetables. It was designed to have features of both the Japanese Nakiri (vegetable knife) and the Western Gyuto (meat knife). Since it is very convenient and practical, it is often used in the home as well.
Aogami No. 2 (Hitachi Metals Ltd.) is made by adding chromium and tungsten/tungsten to Shirogami No. 2. This results in increased toughness and the production of hard carbide molecules that improve edge retention. Many knife users have found that while Aogami No. 2 is very similar to Shirogami No. 2 in terms of edge sharpness, it has slightly better edge retention. Kurouchi finish, the unfinished (black) part on the top of the blade has already developed a dark patina that protects the blade and gives it a traditional Japanese look. Damascus is a laminated steel knife made of multiple layers of different steel materials. The center of the blade is made of hard steel for sharpness, both sides are covered with multiple soft steel materials. The multiple steels are bonded metallurgically, not by plating or gluing. The more the blade is forged, the more complex the waves become and the more beautiful the unique grain pattern becomes.
