PUMA IP 8″ Cleaver – broad Damascus kitchen knife with VG10 core

When dealing with larger ingredients on the cutting board, a broad blade provides more working surface. The PUMA IP 8″ Cleaver combines a 198 mm long and approx. 65 mm wide blade with an edge-retentive VG10 core and a dimensionally stable Pakkawood handle. This Damascus kitchen knife is designed for anyone who values thoughtful design, select materials, and controlled cutting in the kitchen.

This model belongs to the PUMA IP kitchen knife series, designed by the German knifemaker and specialized author Ernst Siebeneicher-Hellwig. Its striking blade shape and visible Damascus pattern make it a characterful tool for the kitchen.

The most important features at a glance

  • Broad kitchen knife blade: 198 mm long and approx. 65 mm wide, also for larger food items.
  • 67-layer blade construction: VG10 core with 33 outer steel layers per side.
  • Japanese VG10 core steel: stainless, high-carbon steel for an edge-retentive cutting edge.
  • Ice-hardened to approx. 60 HRC: for high hardness and good durability with proper use.
  • Pakkawood handle: dimensionally stable handle material with a wood-like character.
  • Thoughtful design: created by Ernst Siebeneicher-Hellwig.
  • Striking Damascus look: visible structure of the multi-layered blade.

67 layers of Damascus with an edge-retentive VG10 core

At the center of the blade is V-Gold No.10, or VG10 for short. This Japanese stainless steel forms the core layer and the knife's edge. On both sides, there are 33 additional layers in which the steels SUS 430 and SUS 431 alternate. Together, this results in a construction of 67 stainless steel layers.

The blade is ice-hardened to about 60 HRC. The high hardness supports edge retention: with a suitable cutting surface, careful maintenance, and proper use, the edge can maintain its sharpness for a long time. How often it needs to be resharpened depends on usage, the surface, and handling.

A broad blade for preparing fresh ingredients

With a blade length of almost 20 cm, the PUMA IP Cleaver provides space for longer cuts and larger food items. It is suitable for cutting and portioning vegetables, boneless meat, and fish fillets. The broad blade surface gives it its independent character within the PUMA IP kitchen knife series.

Important: The broad shape is not an authorization to split bones or process frozen food. Use the finely ground, hard edge for controlled cutting tasks. Avoid impacts, levering movements, and lateral twisting in the material being cut.

Pakkawood handle and functional design

The handle is made of Pakkawood, a densified wood material bonded with synthetic resin. It combines the visual warmth of wood with high dimensional stability. The coordinated handle-blade design supports comfortable handling during food preparation.

With a total length of 335 mm, the knife weighs 255 g. The combination of a broad blade and a Pakkawood handle results in a substantial kitchen tool for chefs who prefer this knife style.

Scope of delivery

  • 1 × PUMA IP 8″ Cleaver kitchen knife
  • Enclosed manufacturer's care instructions

Care and storage

Carefully clean the Damascus kitchen knife by hand after use with a mild dish soap and then dry the blade and handle completely. Avoid the dishwasher, prolonged soaking, as well as aggressive or abrasive cleaning agents. Even stainless steel can corrode under unfavorable conditions; therefore, remove acidic and salty residues promptly.

Use a suitable cutting board made of wood or knife-friendly plastic. Glass, stone, and metal can damage the blade or cause it to dull prematurely. For resharpening, use sharpening tools intended for hard kitchen knives or a professional sharpening service. Observe the enclosed care instructions.

Store the knife in a dry place in a suitable knife block or in its packaging. The edge should be protected from contact with other objects. For transport, a suitable blade guard or a secure container is required.

Intended use and safety

This knife is intended for the preparation of food and general cutting tasks in the kitchen.

  • Sharp blade: Cuts and puncture injuries are possible.
  • Not a toy. Keep out of reach of children.
  • Only work on a stable, slip-resistant, and suitable cutting surface.
  • Keep fingers away from the cutting area and ensure a secure grip.
  • Do not use for splitting bones, cutting frozen food, levering, or opening cans.
  • Never catch a falling knife.
  • Discontinue use if the blade is damaged or the handle is loose.
  • Observe manufacturer instructions as well as applicable regulations regarding transport and carrying.

Frequently asked questions about the PUMA IP Cleaver

What is the PUMA IP 8″ Cleaver suitable for?

The broad kitchen knife is suitable for controlled cutting tasks during food preparation, such as dividing vegetables and portioning boneless meat and fish fillets.

Can I chop bones with this knife?

Do not use the knife for splitting bones or for frozen food items. Despite the broad blade shape, the focus is on cutting performance. Hard impacts and lateral loads can damage the cutting edge.

Does the entire blade consist of VG10?

No. VG10 forms the core and the cutting edge. On each side, there are 33 additional layers of alternating SUS 430 and SUS 431 steels. The blade consists of 67 layers in total.

What does a hardness of approx. 60 HRC mean?

HRC denotes the hardness according to the Rockwell scale. For this kitchen knife, approx. 60 HRC stands for a hard, edge-retentive blade. A suitable cutting surface and avoiding impact and levering loads are correspondingly important.

Can the Damascus knife be put in the dishwasher?

Clean the knife by hand and dry it immediately afterward. Cleaning in the dishwasher can unnecessarily stress the blade, the edge, and the handle.

What is Pakkawood?

Pakkawood is a densified wood material bonded with synthetic resin. It is used for knife handles because of its dimensional stability and its wood look. This handle should also not be left in water for extended periods.
